Inside the old Traders Hotel Manila (rebranded as Hotel Jen, then closed in 2022) along Roxas Boulevard, there was a restaurant at the far corner of the ground floor – a literal hidden gem. Kitsho Japanese Restaurant and Sake Bar had a great ambiance and awesome food, plus the feared fugu when it was in season.
I wonder if executive chef Hiro Mizumoto is still running a professional kitchen. I certainly hope so! 🤞
